Cooking Steps

Boil the Rice

  • Pour 300ml cold salted water (per 2P) into a medium pot with a tight-fitting lid.
  • Stir in the rice and bring to the boil.
  • Once boiling, lower the heat to medium, cover with the lid and cook for 12 mins.
  • Remove the pot from the heat and keep covered for another 12 mins or until ready to serve (the rice will continue to cook in its own steam).
Prep the Veg

  • Trim the green beans and cut into thirds.
  • Halve the chilli and discard the core and seeds. Finely chop. Quarter the lime.
  • Halve, peel and chop the onion into small pieces.
  • Roughly chop the coriander (stalks and all).
  • Shake the coconut milk to dissolve any lumps.
Fry the Beef

  • Place a pan over medium-high heat (no oil).
  • Once the pan is hot, fry the beef mince and onion until browned, 5-6 mins.
  • Use a spoon to break it up as it cooks. Season with salt and pepper. IMPORTANT: Wash hands and equipment after handling raw mince. Mince is cooked when no longer pink in the middle.
Add the Spice

  • Add the Thai spice, green beans and chilli (use less if you don't like the heat).
  • Cook until tender, 2-3 mins. 
Simmer the Curry

  • Pour in the coconut milk and massaman paste and bring to a boil.
  • Cover and simmer for 4-5 mins. Add a splash of water to loosen the sauce if required.
  • Season to taste with salt, pepper and lime juice. 
Dish Up

  • Divide the rice between bowls and top with the beef massaman curry.
  • Scatter over the coriander, peanuts and any remaining lime wedges.
