Preheat your oven to 220°C/200°C fan/gas mark 7.
Roughly chop the olives.
Roughly chop the tomatoes.
Combine the olives, tomatoes and chorizo. Season with salt, pepper and sugar.
Halve your ciabatta horizontally. Pop the halved ciabatta onto a baking tray cut-side up.Then spread the sun dried tomato paste over the bread.
Top the bread with the chorizo mix and scatter over the cheese.
Bake on the top shelf of your oven until the cheese has melted and the edges starting to crisp, 8-10 mins.
Once cooked carefully remove the bread from the oven. Pop onto a sharing board and cut into small triangles
