Cooking Steps

Preheat your oven to 180°C/160°C fan/gas mark 5.

Remove the butter from the fridge and chop it into small pieces. 

Place the butter and chocolate chips in a small pot, and stir on medium-low heat until chocolate chips are perfectly melted, 4-5 mins. TIP: If you have a microwave, melt them in a bowl (on medium power to avoid overheating the chocolate).

In a bowl, whisk 2 eggs and 125g sugar vigorously 2-4 mins, until foamy. TIP: Use an electric whisk if you have one. 

Add the melted chocolate and butter with a pinch of salt and mix, gradually adding the flour and cornflour until the flour is fully combined.

Line an oven dish (30 by 20cm approx) with baking paper. Pour the brownie batter into it.

Pop onto the middle shelf of your oven to bake, 20-28 mins. TIP: You'll know it's done when the middle has set and a toothpick inserted into the centre comes out with no uncooked batter on it (a few crumbs are okay).

Meanwhile, add the cream cheese and remaining sugar to a bowl. Whisk vigorously for 1 minute to until smooth.

Once baked, remove the brownie from the oven and leave to cool completely before removing from the dish and cutting. TIP: If you like fudgy brownies, once cooled, leave your brownie in the fridge for an hour to firm up.

Place the cream cheese frosting in a piping bag to garnish (or a freezer bag with a small incision in one of the corners to make a hole). You can also just spoon it on top. Little cooks: Press very lightly on the piping bag and help draw spider webs, mummy bandages, etc.
