Cooking Steps

Prep the Veg

  • Trim the cucumber, then quarter lengthways. Chop widthways into small pieces. 
  • Halve the cherry tomatoes.
  • Roughly chop the olives.
  • Halve, peel and thinly slice half the onion.
Make the Dressing

  • In a bowl, mix together half the oregano, vinegar, 1½ tbsp oil.
  • Season with salt and pepper and mix to combine.
Finish and Serve

  • Add the cucumber, tomato, onion and olives to the dressing.
  • Crumble in the Greek style cheese.
  • Toss together and divide between plates.
