Cooking Steps

Preheat your oven to 220°C/200°C fan/gas mark 7.

Halve your ciabatta horizontally. In a small bowl, combine the tomato puree, sundried tomato paste, 100ml water, 1tsp sugar and half the Italian herbs

Quarter the cherry tomatoes. Drain and tear the mozzarella.

Pop the halved ciabatta onto a baking tray cut-side up. Spread the tomato paste mix onto the cut sides of the ciabatta and top with the tomatoes and mozzarella. Sprinkle over the remaining Italian herbs and season with salt and pepper. Bake on the top shelf of your oven until the cheese has melted and the edges starting to crisp, 8-10 mins.

Once cooked carefully remove the ciabatta from the oven. Pop onto a sharing board and cut into small triangles.
