Cooking Steps

  • Preheat oven to 180 degrees. And cut tortillas into triangles.
  • Add water and stock to a pot with a lid. Add the bulgur and cook, covered, for 10-12 minutes until cooked and dry. Stir regularly
  • Halve the avocado and remove the pit and skin. Cut the flesh into cubes.
  • Cut the tomato into cubes and thinly slice the onion. Roughly chop the coriander

  • Heat the oil in a pan with a lid on medium heat. Add the onion and fry for 1 minute. 
  • Add the minced meat and fry for 3 minutes. Add the Mexcian Spice and fry for another minute. 
  • add tortilla triangles into the oven and bake until crispy.

  • Cut the lime into wedges.
  • In a bowl, mix the aioli with the Paprika, the juice of 1 lime wedge.
  • Mix with a fork until dressing forms.
  • Season with salt and pepper.

  • Divide the bulgur over bowls or deep plates.
  • Garnish the bowl with the minced chicken, tomato cubes, avocado cubes, beetroot tortilla chips and the remaining lime wedges.
  • Sprinkle with the dressing and season with salt and pepper.
  • Serve with tortilla chips to the side.
